Cook along with the Possible team

As part of the Climate Cook-In, the Possible team (and their family members!) have been trying out new climate friendly recipes. Here are two cook-along tutorials exclusively for our fantastic hosts. Enjoy!

  1. Gnocchi and cherry tomato sauce

Join Patrik and his mum as they prepare this delicious Italian dish.

What you'll need

Ingredients (based on 2 servings):

  • 4 Desiree potatoes (boiled and mashed)

  • 100g-175g "00" pasta flour (extra dusting)

  • pinch of nutmeg

  • 1 small egg, beaten (can be omitted)

  • 1.5 tbsp olive oil

  • 1 clove of garlic

  • 1 can of tinned cherry tomatoes or 750g ripe cherry tomatoes

  • 10g fresh basil

Equipment:

  • Potato masher

  • Saucepan

  • Fork

  • Mixing bowl

2. Carrot bacon

Cook along with Emma and Hannah as they make vegan bacon out of the classic orange vegetable.*

What you'll need

Ingredients:

  • 2 large carrots

  • 3 tbsp soy sauce (can be subbed for tamari or liquid aminos)

  • 2 tbsp olive oil (can be subbed for any other liquid oil e.g. vegetable, sunflower)

  • ½ tbsp maple syrup (can be subbed for other syrups e.g. golden, agave, date)

  • ½ tbsp garlic powder

  • ¼ tsp ground black pepper

  • ¼ tsp paprika

  • ¼ tsp liquid smoke (can be subbed for smoked paprika)

  • Optional: 1 tbsp tahini

Equipment:

  • Medium size bowl

  • Veg peeler or mandoline slicer

  • Fork or whisk

  • Baking tray

  • Baking paper
